Most of the food I make for the week occurs on Sundays. I have the most free time on Sundays and it is nice to come home from work on a Monday and have something ready to heat up. In addition to making dinner on Sunday, I typically bake a treat for the week, cut up all of our fruits and veggies, and cook a grain or two. Today's food prep consisted of; cooked lentils to have ready to add to salads, cooked butternut squash for salads or sides, chopped mango and strawberries, gluten-free "healthy" butterscotch chip bars (a treat for the week), cocoa-date walnut balls (recipe coming soon!), stuffed turkey burgers, and roasted chickpeas for snacking (not many survived the day). Having food ready when you come up takes away stress, eliminates bad snacking decisions, and allows for healthy eating to occur! This may seem like a lot to do/make but Sunday's are the only day of the week I don't work and most of us have the some free time on Sundays. So put on those Real Housewives re-runs and get to cookin'!
