Mmmm I Love Indian: Chana Masala

Confession: I was hit with a major craving for Indian food yesterday. Am I the only one who gets random cravings for Indian food? I sure hope not! This stuff is absolutely delicious. Maybe it’s the naan ;)

Rather than spending too much money by ordering out, I decided to cook my own. To be honest, Indian food is a little intimidating. I know it’s simple, but I feel like it requires too much measuring with all of the spices. I HATE measuring when I cook, so this was a different style than I am used to. I prefer to just throw things in the pot ;)

After consulting with a few recipes, I had an idea of what I was dealing with. I compiled a few and created my own masterpiece :)

Chana Masala

Ingredients

Preparation

  1. In a large cast iron skillet, heat butter over medium high heat.
  2. Cook onion until golden and caramelized, about fifteen minutes.
  3. Add tomato paste, garam masala, turmeric, ground coriander and cumin. Cook for another few minutes to form a think paste.
  4. Add garbanzo beans and diced tomatoes.
  5. Reduce heat to medium and cook for another five minutes.
  6. Add salt and lemon juice. Adjust as necessary.
