Finally as promised here is the recipe for the best cookies that I have ever made!
I am a huge fan of Millie’s Cookies or American style cookies if you like, with there soft centers and tasty flavour combinations, who can resist a little bit of cookie heaven.
Of course the only downside to these types of cookies is the very high sugar content, which obviously makes them so delicious. However, if you are like me and like to get some nutritional value from your food even sweet treats I much prefer lower sugar alternatives when available.
A little while ago I was asked to review Truvia , a new sugar alternative to hit the UK which has a low glycemic index. I’ve been getting stevia from iHerb for a long time now, but was interested to see how this powdered UK version matched up.
Stevia comes from the Stevia leaf and is great because it is calorie free, meaning that it is open to diabetics and those that are watching their calorie consumption. With all this in mind and with an itch to bake something I thought that it would be great to use in my cookie recipe.
Beat the vegan spread and sugars together until a light and fluffy mixture forms. Once well combined add the egg and vanilla and stir through. Pour in the flour, saltt and baking powder with the chocolate and peanuts and stir in until the flour is just mixed in.
Take pieces of the mixture and roll into small balls an place on a non-stick baking tray. Bake for just 7-8 minutes to produce cookies with a gooey centre for that ultimate Millie’s Cookies experience.
Once cooked allow the cookies to rest and firm up and them make yourself a cup of tea or coffee and indulge until your hearts content!
These really are the best cookies that I have ever made. Fair enough they are probably not the healthiest but they do have much less sugar than their Millie’s counterparts. I also love that they are mini cookies so I can get my sweet fix without over doing it.
