Mini Eggplants Rule

I’m very much aware that the title of this post is very 1990.

But it is very appropriate for a New Kids on the Block loving, Full House and Saved by the Bell watching fool like me, right?

Anyway, you know those cute mini eggplants that I picked up at the farmers market over the weekend?  Well, we ate ‘em last night!

All I did was toss them in a skillet along with some zucchini, squash, red onion, olive oil, sea salt, and pepper until they were tender.  It only took about 10 minutes!

They were the perfect complement to our main course which was Salmon with Pepita-Lime Butter .

Michael and I both enjoyed this Eating Well recipe so much that it has earned a spot on our “Make This Again” list.  The only change that I made to the original recipe was that I used Earth Balance rather than butter.

We love Earth Balance!

As good as it was though, the fun part for me was getting to say the word pepita over and over again.  The word is almost as cute as mini eggplants.

Pepitas are also known as pumpkin seeds (not nearly as fun to say though).  I love eating them because they are rich in zinc, calcium, potassium and magnesium, omega-3 fatty acids, and vitamins B, C, and E.  You have to love a food that makes you pretty. ;)

Fun Question of the Day:  What is your favorite television show from the 1990s? This is a very difficult one for me to answer, but I’ll go with Who’s the Boss and The Cosby Show (which both started in the 80s), Saved by the Bell, Full House, Growing Pains, Friends,  Perfect Strangers, Step by Step… I need to stop myself now, or I’ll go on for days!
