Lately I have been a carb and sugar monster! All I want to eat is cereal and bread. I am currently on a Life Cereal kick…not the best for you, but sooooo good with ice cold almond milk. I’ve also been on a non-gluten free kick. I still eat mostly gluten free, but have not been so strict on my GF diet. Things seem to be doing just fine with my skin and stomach…so I’m just going to roll with it for now.
This single serve, microwavable cookie is all the things I love in cookie form. Plus, it takes about 2 minutes to ensemble and microwave. 2 minutes and thirty seconds if you count the time it takes for me to inhale it!
This cookie doesn’t call for very many ingredients, and I can guarantee you have all (or most) of them on hand.
Mix all ingredients together in a small bowl. Then, form a ball and place onto a microwave safe plate and flatten out like a cookie. Bake on high for about a minute and a half. EAT.
Look at that drippiness on top. I used Trader Joe’s brand of Almond Butter…basically tastes like candy…and so necessary on top of this cookie!
I’ve been a little hesitant to share with you that I’ve been eating gluten. Why? Not sure… I’m thinking it’s because the past three years my diet has been pretty much absent of the G. I also think that part of the reason I ever went gluten free was because of my eating disorder. A lot of “junk food” or foods made with refined grains…are made with gluten. I am coming to realization that while in college, it was easier for me just say that I was gluten free, rather than have to go through awkward situations of why I didn’t want to eat greasy french fries and pizza for dinner every now.
Today- I am beyond that and finally comfortable with my body and myself. Gluten, I shale eat you if I want to eat you.
