I'd love to report that I held a BBQ filled with Skinny Beast Makeover fare that the folks raved about, but, alas, I am sorry to say that our menu consisted of... full fat hot dogs, cheeseburgers on white buns, and fat-filled potato salad and cole slaw. Sometimes a compromise is in order to please the masses and treat the hubs. Please...do not panic. I have not given up nor have I changed my ways. I did get a chance to test two of the aforementioned appys that I learned at the Culinary Hors d'oeuvre's class, and boy were they whoppers (yummy). In a Mexican food mood, I whipped up... BLACK BEAN MANGO SALSA & GUACAMOLE and served the duo with blue corn chips...
Here's my versionSalsa:
1 ripe mango, diced
1 grated shallot or 1/4 red onion
1 tomato, diced
2T olive oil
juice of 2 limes
3T cilantro, finely chopped
1/4t each black pepper and sea salt
1 can low sodium black beans, drained and rinsed
Mix all of the ingredients in a bowl, cover until use.
Smash all ingredients in a bowl, add tomatoes and gently stir, cover, refrigerate til ready
AVOCADO MOJO: Avocados have a bad rep for being 'fattening', BUT...check out the benefits!! Avocados provide nearly 20 essential nutrients, including fiber, potassium, Vitamin E, B-Vitamins, and folic acid. They also act as a "nutrient booster" by enabling the body to absorb more fat-soluable nutrients, such as alpha and beta-carotene and lutein, in foods that are eaten with the fruit. Avocados can also protect the ticker...eating them helps folks meet the dietary guidelines of the AHA (American Heart Association)
