Memorial Day BBQ

I'd love to report that I held a BBQ filled with Skinny Beast Makeover fare that the folks raved about, but, alas, I am sorry to say that our menu consisted of... full fat hot dogs, cheeseburgers on white buns, and fat-filled potato salad and cole slaw. Sometimes a compromise is in order to please the masses and treat the hubs. not panic. I have not given up nor have I changed my ways. I did get a chance to test two of the aforementioned appys that I learned at the Culinary Hors d'oeuvre's class, and boy were they whoppers (yummy). In a Mexican food mood, I whipped up...
and served the duo with blue corn chips...

Here's my versionSalsa:
  • 1 ripe mango, diced
  • 1 grated shallot or 1/4 red onion
  • 1 tomato, diced
  • 2T olive oil
  • juice of 2 limes
  • 3T cilantro, finely chopped
  • 1/4t each black pepper and sea salt
  • 1 can low sodium black beans, drained and rinsed

Mix all of the ingredients in a bowl, cover until use.


Smash all ingredients in a bowl, add tomatoes and gently stir, cover, refrigerate til ready
