This is a simple soup that is full of fresh vegetables and vitamins but also allows that meaty taste
Water (2 litres)
Beef stock cube
turkey sausage (or other meaty source)
salt and pepper
Time needed 45-90 mins
Chop up onions and garlic and fry them in some water in the base of a large pot. Add meat if not pre-cooked. I’m using precooked turkey sausages (low fat). Once onions, garlic and meat are cooked add water, beef stock cube, and table spoon of tomato paste as well as a table spoon of olive oil.
Chop carrots, and zucchini into cubes and throw them into the pot to boil. Add some shredded cabbage as well. ( You can add any season vegetable you like – sometimes I add some slices of onion or broccoli or cauliflower – depending what I have available). Add finely chopped parsley (alternatively chives)
Season with pepper and add salt ( keep it low if you are trying to diet – meat should be salty enough)
Let boil for at least 30 minutes. Keep pot covered so that it doesn’t dehydrate. Every so often check it and if necessary add more water.
