Meatloaf Recipe

This afternoon, I made a chopped salad for lunch using the Annie’s lite poppy seed dressing that I just bought. This dressing was excellent. It had a light flavor and wasn’t too overpowering. Yes for success in finding a dressing!

For my salad, I chopped up romaine lettuce (why is lettuce so much better chopped?) Then, I added green and red pepper, red onion, cucumber, pickles, shredded carrots, and chickpeas. I just realized that I forgot to add feta. That sucks because I love feta. I also had a cup of chocolate milk for extra protein.

When Jacob came home from school, the kids worked on their valentines. Jacob picked out paper airplane valentines, and Jaden picked out Angry Birds valentines.

Jaden’s valentine’s came with little Angry Bird tattoos. This pig tattoo looks like he had way too much fun at a fiesta.

I wish I could see the parent’s face of the child who brings home a tattoo of a drunken pig. Maybe I shouldn’t have had Jaden sign his name…

Meatloaf Recipe

For dinner, I made meatloaf. The meatloaf recipe that I use is easy and simple because that’s how many family likes it. However, feel free to add onions or whatever else you would like.

Ingredients:

  • 1 pound ground beef
  • 1/2 cup ketchup, divided
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1/2 tsp. Italian seasoning
  • 1/2 cup parmesan cheese, divided

Note: I used Italian style breadcrumbs and omitted the Italian seasoning.

Directions:

  1. Preheat over to 375 degrees.
  2. Mix together meat, 1/4 cup ketchup, breadcrumbs, milk, egg, Italian seasoning, and 1/4 cup parmesan cheese.
  3. Shape into loaf and place into a sprayed loaf pan.
  4. Top with remaining ketchup and remaining parmesan cheese.
  5. Bake approximately 40-45 minutes.

I don’t eat meatloaf, so I made myself the  cod  that I bought last week (first, I called my dad and asked if cod was good – he said it was). I also made veggies and mashed potatoes.

Maybe I was a little too hard on the cod. It was actually really good.

Danny also had some leftover orzo  pasta from yesterday’s party.
