Meatless Mondays – Cheesy Gnocchi with Basil Pesto

This Easy Cheesy Gnocchi with Basil Pesto to make & ready in 5 mins. Note green text for cleaner options.

Ingredients:-

  • Ready made fresh Pasta Cheese filled Gnocchi (I bought mine from Lidl – they only need 3 mins to cook) (any wholemeal grain can work here!)
  • Basil pesto ( organic pesto recipe here)
  • Chopped Tomatoes
  • Ruccola
  • Toasted Almond Flakes
  • Parmesean Cheese

 

Method:-
-Cook the Gnocchi in boiled water according to packed instructions
-Chop tomatoes
-Dry fry the flaked Almonds & put aside
-Once pasta is ready, mix the pesto with the pasta & put in a plate
-Add the tomatoes on top, than the ruccola.
-Garnish with Almonds & grate some cheese on top.
