Meatless Monday Skinny Rule-Breaking: Vegetarian By Day; Conscious Carnivore By Night

I’m a rule breaker. Always have been; always will be. “Meatless Monday” reminds me of what we used to say in our college days about the heavy drinking people do on St. Patrick’s Day — It’s amateur hour. I wonder if my vegetarian friends out there think the same thing about Mondays?
Nonetheless, introducing the concept to every family is helpful. Most of the time, I’m a vegetarian by day and a conscious carnivore by night. It permits me the opportunity to seek out vegetarian forms of protein and experiment with different nuts, seeds and grains every day for lunch. This healthy diversity keeps life interesting and nutritional.
To live an Easy Skinny Life, replace meat protein with a vegetarian form of protein for most breakfasts, some lunches, and then at least one or two dinners a week. If you are already a vegan, vegetarian or any combination in between, make certain that every meal contains adequate protein. It’s a challenge, and together we’ll examine it in more of my Skinny recipes.
Tonight, I’m breaking the Meatless Monday rule (of course) and sautéing a fast, lean red meat one-pan meal. It happens to be Gluten-Free, High Protein, Low Sodium and High Fiber with a burst of colorful nutrition.
