Meatless Monday’s – Spaghetti Napolitana with fresh tomatoes

Nothing beats pasta, living in the Mediterranean eating pasta is like tying our shoelaces, it comes naturally to us! Here is Claire’s Spaghetti Napolitana recipe, made with fresh tomatoes. See my comments below on how to make sure this recipe is clean! Yes you can eat pasta when eating clean!
RECIPE: makes 2
Ingredients
2 Garlic cloves chopped
1 small onion chopped
2 sun dried tomatoes chopped
some wine
3 large juicy ripe tomatoes cut into small cubes
A teaspoon of curry powder
A teaspoon oregano
Half a teaspoon thyme
salt & pepper
Fresh basil leaves chopped
Parmesan cheese
Spaghetti
Method
- Fry all the ingredients together, starting with the garlic and onions and simmer for 15 minutes
- Boil the spaghetti
- Mix the sauce together with the spaghetti once it is cooked
- Sprinkle some cheese on top
- Serve
