Meatless Monday’s – Carrot, Lentil & Sweet Potato Soup

I’m a huge lover of soups. I could eat soup every day. This carrot lentil and sweet potato soups is another delicious one to try!

INGREDIENTS:-

  • 2 tsp cumin seeds
  • pinch chili flakes
  • 2 tbsp olive oil
  • 600g carrots , washed and chopped
  • 200g washed & rinsed split red lentils
  • 1 Large Onion
  • 1 Large Sweet Potato
  • 2 small normal potatoes
  • 1 celery stalk with leaves
  • 1 Liter Vegetable stock
  • Salt & Pepper
  • Chopped Parsley

METHOD:-
-Heat a large saucepan and fry Onion, the cumin seeds and chili flakes in some oil.
-Add the carrots, potatoes, lentils, celery & Veg Stock, bring to the boil.
-Simmer for about 20 mins or until potatoes are soft.
-Season with Salt & Pepper.
-Blend or mash with a masher.
-Sprinkle the chopped parsley on top
