Meatless Monday – Raw Zucchini ‘Spaghetti’ with Basil Pesto

This is so enjoyable and healthy! A tasty way to get those greens into your dish!
FOR THE ‘SPAGHETTI’
2 long zucchinis / Courgette
FOR THE PESTO
1 bunch of fresh basil
1⁄2 cup raw Walnuts
1 garlic clove
3 tablespoons extra-virgin olive oil
Himalayan Pink Salt & Pepper
Method :- Slice your zucchini or courgettes using a slicer/peeler than cut them into thin strips and place in a large bowl. Combine other ingredients in a blender to make the pesto. Feel free to add more olive oil if desired. Pour the pesto mixture over the zucchini pasta, Mix & serve.
