Meatless Monday – Quinoa with Grilled Veggies

This week’s meatless Monday dish is QUINOA with Grilled Veggies. Looks delicious and I’m certain it is!

Quinoa and mixed grilled veggies

Ingredients:-
Organic Quinoa Tricolore
Cherry tomatoes
Feta Cheese
Rucola
Sunflower Seeds
Pumpkin Seeds
Sundried tomatoes
Chickpeas
Olive oil or Flaxseed oil

Chop & Grill the following veg-
Marrows / Zucchini
Aubergine
Mushrooms
Yellow pepper or green
Leeks

Method:-
-Cook the Quinoa according to packer instructions (try not to over cook, i like abit hardish)
-Chop & grill the above veggies
-Plate a bed of Rucola
-Once quoina is cooked, mix all the remaining ingredients together, mix in the olive oil & stir.
