Meatless Monday – Leek and Potato Soup

With some cold days still around this leek and potato soup is an ideal warm and filling dish.

For a cleaner version see optional ingredients in green

  • 1 tbsp vegetable oil (light olive oil)
  • 1 onion, sliced
  • 2 Large potatoes, cubed
  • 2 Large leeks,sliced
  • 1.2 litres vegetable stock
  • 150ml double cream (soya cream, almond cream)
  • Salt & Pepper


  • Heat the oil in a large pan and add the onions, potatoes and leeks.
  • Cook for 3-4 minutes until starting to soften.
  • Add the vegetable stock and bring to the boil.
  • Season well and simmer until the vegetables are tender.
  • Blender until smooth.
  • Stir in the cream. heat through and serve.
