Meatless Monday – Home-Made Chickpea & Quinoa Burgers with Rosemary Fries

Home-Made Chickpea & Quinoa Burgers with Rosemary Fries Let’s face it we all love Burgers! But how about try out these yummy healthy burgers instead of the usual beef or chicken patties?

Makes 8-10 patties (depending on size)

Ingredients:
1 Large cooked & mashed potato, cooled
3 cloves garlic
1 chopped red onion
2 cans chickpeas, washed & dried
2 tbsp dried thyme
2 tbsp lemon zest
2 tbsp lemon juice
1 cup cooked quinoa (I use the brand Biofair Organic Quinoa Tricolore)
1 Free Range Egg
Chopped Parsley
1 grated Carrot
Salt & Pepper to taste
A little flour, for dusting the burger patties

FOR THE FRIES:-
3 large potatoes cut into fries (sticks)
Olive Oil
Salt & Pepper
Rosemary

-Mix all the above Fries ingredients together. Pop in the oven & bake until soft inside & crunchy on the outside.

FOR THE BURGERS:-
1. Cook the potatoe in boiled water & mashed once ready.(set aside).
2. Cook quinoa according to packet instructions. I prefer to soak my quinoa at Least 1/2 an hour before cooking. (set aside)
3. In a food processor add the garlic, onion, chickpeas, dried thyme, lemon zest, lemon juice, cooked quinoa, Egg, Parsley, grated Carrot, mashed potatoe, salt and pepper to taste. Pulse until well combined.
4. Form into equal sized balls. Pre heat a pan and press patties gently until slightly flatted. Dust some flour on each side and cook for 4-5 minutes per side, flipping once. Be careful to move gently so they don’t fall apart.
