Meatless Monday – Fennel & Carrot Soup

This week Claire’s Veggie Wonders , introduces us to a really refreshing soup consisting of carrots and fennel.

Carrot and Fennel soup

Ingredients:-
-Olive Oil
-Curry
-1 Leek
-2 Bulbs Fennel
-3 Carrots
-2 Potatoes
-2 Apples
-Soya Cream
-1 Liter water
-Salt & Pepper

-For Garnish-
-Croutons
-Parsley

Method:
-Fry the Curry in some olive oil
-Add the Leeks
-Add the rest of the ingredients:- Potatoes, Carrots, Fennel, Apples, water, Salt & Pepper.
-Cook for 20mins or till veg is soft
-Once ready blend the soup
-Add the cream
-Garnish with Croutons & Parsley
