Ingredients Serves 4:-
3 ripe avocados
Juice of 1 lemon
2 garlic cloves
Handful of fresh basil
Salt & Pepper
500g Wholegrain or Spelt Penne Pasta
(You can also use this as a dip or as a salad dressing)
1 – Boil the Pasta.
2 – While the pasta is cooking scoop out the avocado flesh & blend with the lemon juice, garlic, oil, basil, salt & pepper until smooth.
3 – Mix with the pasta & serve. Easy yeah!
