Meatless Monday – Claire’s Summer Beach Roll

This is just perfect to take with you to the beach! So you can enjoy the summer while eating clean too!

Hummus, Sundried Tomatoes

 

Ingredients:-

Soya Bread or Multi-seed Bread
Hummus
Crushed Walnuts
Sundried Tomatoes
Gbejna (Goats Cheese)
Romaine or cabbage Lettuce

Method:-

Spread the hummus on both sides of the roll.
Sprinkle the crushed walnuts on the hummus.
Add the sundried tomatoes, Goats Cheese & finish off with the Lettuce.

 Now Serve, Eat & Enjoy!!
