My first attempt in making Caponata & I must say it was pretty easy & tasty!!
Eggplant/Aubergines, cut into 1/2-inch cubes
Diced Ripe tomatoes
Tablespoon brown sugar
1/2 cup Water
Sweet Corn (Optional)
Salt & Pepper
-Heat oil in heavy large pot over medium heat.
-Add onion & garlic cloves.
-Add the eggplant & Marrows,sauté until eggplant is soft and brown.
-Add diced tomatoes,Chilli Flakes, Balsamic Vinegar & Sugar.
-Add some water, the capers, olives & Sweet Corn.
-Cover and simmer for about 12 minutes, stirring occasionally,
-Mix in fresh basil.
-Season with salt & Pepper.
Best Served with Couscous.
