Mashed Cauliflower & A LaraBar Giveaway!

Good evening Beautiful,
How was your long weekend!? I finished up mine quite nicely by lounging in bed, I had a nap, and watched some tv shows! It was glorious. Although, I have to admit I did ZERO exercise over the whole weekend. I felt like poop this morning when I woke up, and thank god I had TRX today at lunch time. I sweat my butt off and could honestly feel like I was struggling, not sure if it was the workout, or my lack of maintaining any sort of fitness over the weekend. Either way – it was a challenge.
I had actually convinced myself to go for a run outside tonight, but as it turned out there was torrential downpours the whole day and it continued into this evening. I’m not making excuses, but I’m certainly glad I didn’t run because I cooked an amazing meal for dinner. What was it you ask? Well, I cooked up some delicious mashed “potatoes” (aka mashed cauliflower) and some turkey and cilantro meatballs with some baked kale. I’ve never made mashed cauliflower before and I have to say I was pleasantly surprised! It tasted almost identical to mashed potatoes, with more nutrients and goodness in every bite! Here’s what I did:


Pre-cooking and blending
Ingredients
1 large head of organic cauliflower
5 large cloves of garlic
¼ tsp of nutmeg
2 tbsp butter
Salt and pepper to taste
Directions
1. Wash and cut up the whole head of cauliflower.
2. Place into a steamer and bring to a boil.
3. Boil until the cauliflower is soft, then blend in a food processer.
4. Reheat and add the rest of the ingredients.The finished product!
So easy huh? I promise you it’s sooo good. Here is the recipe for my turkey cilantro meatballs:After the mixing!
Ingredients
1lbs of lean ground turkey
1 cup of cilantro finely chopped
¼ of a red onion, minced
2 tbsp of garlic, minced
2 tsp of sea salt
Pepper to tasteDirections
1. Literally mix all of the ingredients in a bowl.
2. Once it’s all evenly mixed, roll into balls with your hand and place in a hot frying pan (with some olive oil).
3. Grill over medium heat until there is no more pink (sorry – I didn’t time how long it took!), you will need to flip the meatballs at some point as well!In the pan ready to cook!

So this coming weekend is one of my best friends wedding. Alyssa – I wrote about her bachelorette party, is getting married on Saturday and I’m super excited to see her walk down the aisle. Her and her fiancé have been dating for 9 years! I remember when they first met! It’s amazing to see how they’ve grown and stuck together for almost a decade! It’s true love. I’m trying to plan out how to stay the most healthy over this weekend…. There’s a lot going on.Friday night C is taking some of his employees out for a night and I’m invited, which means going out for dinner and then going to a club for bottle service with 12 other people. I’m fairly convinced that I’m going to go reeeeally easy on Friday night because I don’t want to be super tired for Alyssa’s big day (super tired means super emotional in an already super emotional situation… not good for Ms. Emotions over here) and then I will let loose more at Alyssa’s reception since we’re staying really close to her wedding venue in a hotel. In terms of diet, I should be pretty ok sticking to a paleo diet. I’m having steak at Alyssa’s dinner, and on Friday I can just pick whatever is most paleo on the menu.*** Admission time. The place we’re going on Friday is Joey’s, and they have these unbelievable potatoes that they call “crispy mashed potatoes”. OMG. You don’t even know how amazing these are. They come out looking like a spring roll topped with sour cream, chives and bacon. When you cut into it, it’s delicious, warm, creamy mashed potatoes. I will probably have one order of these. Or two. JTomorrow Jenny and I are going to another run. I didn’t run all weekend so I’m going to try and convince her to do 7.5km instead of 5. I really hope she’s ok with it – and that the weather is nice. I need to run more, my goal is 3x/week, and now I’m not only doing the Zoo Run, I’m participating in The Run For The Cure on September 30th also with Michelle from Push.Pump.Progress. I raised $125 today, and I still have basically the whole month left to fundraise. How cool is that? I have such supportive friends, family and co-workers!Now for some fun follower stuff! I’ve been planning a giveaway for a while now and I think tonight is the night that I’m going to reveal it. It’s one of my most favourite products out there… can you guess what it is? My samples!
LARABARS!!!!The wonderful ladies at LaraBar sent me 4 different bars to try, 1 of them I've had MANY times (it's my favourite, and the one I rave about most) Coconut Cream. I also had their Chocolate Chip Cherry Torte, their Jocalat Chocolate Hazelnut and their Uber Banana Foster bar. The three besides the Coconut Cream I've never had before and eat one was amazing. The Banana Foster one was my favourite out of them... it tasted sooooo good, like warm bananas with cinnamon (at least I think it was cinnamon?). The Chocolate one honestly tasted a lot like a chocolate bar to me (NO complaints!) and the cherry one was equally as delicious. I have yet to come across a LaraBar or a LaraBar affliate that I dislike - for real, they did not ask me to say any of that! So, I wasn't kidding about the giveaway -I’m seriously giving away 16 different types of Larabar’s thanks to their generosity! I like you and LaraBar on Facebook! I love Jocolat, but I haven't tried most Lara Bar flavors yet - I really want to, becuase Jocolat bars are so yummy and Lara Bars feature the same healthy, simple ingredients! I hope I win! livinglearningeating AT gmail DOT com.
