I love doing “Monday Musings” posts, because I’ll jump at every chance to ramble about random things – especially when food and other lovely things are involved. So here we have monday musings – marvelous!
1. I love this girl (Hi Heather!). A while ago, I won her bloggiversary giveaway, but somehow the package got lost in the mail. So, a little while ago, she insisted on sending me a box of goodies to make up for it!
Good stuff indeed – most of which is already gone! I especially loved the Bobo’s oat bars, TJ’s chocolate, and FROG preserves(!). So excited I finally got to try the FROG, and it definitely lives up to the hype! There was also a chocolate Quest bar, but that one didn’t even make it to the photo…
2. Being a real new yorker – I had pizza for lunch the other day. Which is weird, because I’m not really a pizza person. I almost never crave it, so when the craving hits, you can bet I’ll be satisfying that one.
Pizza from Two Boots, #plantPOWER style of course – the folded one is the “v” for Vegan – with super melty Daiya cheeze. The left is full of roasted veggies, tons of tomato sauce, and garlic breadcrumbs. So good. I think that will keep my “real pizza” cravings at bay for a while.
3. New water bottle! And I love it!
S’well insulated bottle. All steel, no plastics, double walled, and fits in bags super easily.
4. This dinner. Ohman.
Included this. Not that I need gluten-free pasta, but made from black beans, it’s super high protein – meaning I don’t need to add any other proteins to include it in a well-rounded meal.
Served with a generous helping of my butternut squash pasta sauce . If you like to make your own pasta sauce, you have to try this one. It’s probably the recipe I’m most proud of!
5. Simple dinners with delicious fall produce.
Greens, roasted brussels sprouts and tricolor carrots, salmon burger, balsamic glaze and nooch. Yes, this is my kind of comfort food.
6. I want to run a half marathon. I’ve particularly got my eye on the NYC Half in the middle of March, but a few things are deterring me from signing up:
winter training. I already have a base of 8-12 miles/week, so if I did a 12 week plan, I’d start really training in december. I wouldn’t mind taking some of my shorter runs inside, but I never know what the weather will be for those long runs. Cold doesn’t bother me, it’s the ice and snow I’m worried about.
training alone. at the moment, I don’t have anyone to train with, and don’t really have the time to join a running club. This is not that big of a deal, as I like to used running time to think and reflect, but it would be nice to have a long run buddy here and there.
entry fees. races are expensive! I can put aside some money for it no problem, but it’s still something on my mind.
hills. The first 6 miles of the race is the Central Park loop – and I’d definitely have to train on hills. Again, can do, but must be considered.
Aside from that, I’ve really hit a comfortable spot with running where I know how much is too much, how fast is too fast, and what my legs can do. And I’m pretty confidant I can run 13.1 miles, but I want the challenge. It’s something to work for, and something to keep me sane, that won’t take a ton of my time. I have a month to decide.
