The first time that I ever tried raw kale in a salad, I absolutely hated it.
I thought it was chewy, rough, and just plain gross.
After just a few miserable bites, I was all set to write it off forever.
Somewhere along the road, I got into making kale chips and adding kale to my smoothies…
And I figured that I’d give kale salad another chance.
Massaging the kale with things like olive oil, coconut oil, or vinegar for several minutes really improved both the consistency and the taste, and before I knew it, kale became a staple base in my salads.
In fact, one of my very favorite lunches is a recipe involving kale.
2-3 cups of raw kale, rinsed and chopped
1/4 avocado, diced
1 grapefruit, peeled and sliced
1/4 cup Mandarin orange slices
1/4 cup red onion, sliced
Sunflower sprouts, optional
1 teaspoon of lemon juice (lime juice would also work)
Braggs liquid aminos (or soy sauce), to taste
1 teaspoon raw honey
In a large bowl, massage the avocado into the kale until the avocado is distributed throughout and the kale is soft. Add grapefruit, Mandarin orange slices, red onion, and sprouts, if using. Toss everything in lemon juice, liquid aminos, and raw honey. Serve immediately.
