Baby, Healthy Eating
Some days, a baby can make getting to eat a very long and challenging process.
This is one of those days.
But after many interruptions, including two diaper changes, one bottle feeding, about a dozen pacifier plug-ins, and some rocking to lull him to sleep, I was finally able to finish eating my lunch.
It only took about two hours- which lands me at about the time I’d normally have my afternoon snack.
Lunch was pan-roasted mushrooms with oven-roasted beets, butternut squash, eggplant, green bell pepper, and onions served with quinoa on a bed of mixed greens. Everything was tossed in coconut oil.
Since I was a bit preoccupied while eating, I’ll probably have this again for dinner tonight- maybe with some butternut squash soup…and wine.
Lots of it.
My goal is to finish it all in under two hours. Wish me luck!
