Dinner last night was roasted chicken. It’s a favorite in my household, and it is hard to believe that I used to be intimidated to make it. I make it all of the time now!
Anyway, it always yields a ton of leftovers, so I had some for lunch today as well.
When we had it for dinner, it was served with roasted veggies and potatoes, but I had it as part of a salad today instead.
