low fat blueberry and lemon muffins

Ugly, but healthy and tasty!  The lemon was a last minute add that I'm still on the fence about.  These dense muffins will leave you feeling full and satisfied!  

Low Fat Blueberry and Lemon Muffins
adapted from Gina's Skinny Recipes
1 cup unsweetened apple sauce1 cup whole wheat flour 1 cup all purpose flour 1/2 cup sugar1 tsp baking soda1/2 tsp salt1 1/2 cups blueberries1 large egg, beaten1 tsp vanilla2 T melted butterzest from 1 lemon Preheat oven to 325.  Sift both kinds of flour into a bowl and combine with sugar, baking soda, and salt.  Mix well.  In a medium bowl, mix eggs, melted butter, vanilla, and applesauce.  Add to the flour mixture and stir until just blended.  Gently fold in lemon zest and blueberries.  Pour batter into 12 lined muffin tins and bake for 25 minutes.  Cool for about 10 minutes. 

Note: we couldn't eat these without singing "my muffin top is all that whole grain, low fat, I know you wanna piece of that, but I just wanna dance..." My 30 Rock obsession cannot be tamed.
