Did you all miss me? Man it’s been a hectic couple weeks. I ended up having to work much more than I expected which left the rest of my days left for cramming for finals. I normally don’t cram but silly me figured I had 3 days last week to study but ended up working all 3- not so smart! Anyhow, things are starting to slow down now (I think.)
Yesterday I had a luncheon at work and it was really nice! It was at the Convent (the place I work is run by the Nuns!) and was catered. I ended up having turkey, a shish kabob, lots of green beans, a roll, and a couple bites of cake (wasn’t that great- I told you I’m picky with desserts!). The only thing I passed on was salad, mashed potatoes and gravy, and stuffing because I’m not a fan of any of those. The people are funny at work though- they all tell me I’m super tiny and one asked if I “exercised” like walking. It’s so funny how I don’t look like I lift when I’m in normal clothes! Just wait ’till they see me flex. Ha!!

Speaking of lifting, I’m only working out 5 days a week now- and purely weights. 2 days off used to scare me but now I really need it. And I’ve increased my calories and my weight has actually stayed the same! Crazy! Oh, and I did clapping push ups again today for the first time in months and am proud to see I exceeded 10!
On the food front, I’ve been eating the. exact. same. meals day in and day out these past couple weeks because I haven’t had any time to cook or bake at all! Today I got a little break though so I decided to make some savory bread for once!
Makes 8 slices @ 90 calories, 5.5 grams protein, 1 net carb, 6.5 grams fat

Ingredients:
- 1 cup ground flaxseed
- 2 tsp baking powder
- 3 eggs (separated)
- 1/2 cup water <-you might use a little less
- 1/4 cup pure pumpkin
- 1/2 tsp sea salt
- Pinch of psyllium (optional, but I added a bit too much water!)
- Herb & Garlic seasoning (use whatever seasoning you want)
- 2 packets stevia <-doesn’t make it sweet, but brings out the taste
Directions:
- Preheat oven to 375. Spray a loaf pan with nonstick cooking spray.
- Beat egg whites until foamy. Then beat in egg yolks, water, and pumpkin.
- Mix in the rest of the ingredients.
- Pour into loaf pan.
- Bake about 45 minutes or until a knife inserted into the center comes out clean.
