Low-Calorie Recipes: Tacos

These tacos are relatively low in calories and have a satisfying crunch to them from the shells. You can substitute any kind of shell or tortilla for the Old El Paso shells but that will change the calorie count. The amount of tomatoes you add can serve as a salsa along with the Tabasco sauce. Adding more tomatoes and lettuce turns it into more of a taco salad and makes it more filling.

Tacos

1 lb. 93 percent lean ground beef
1 package taco mix
Old El Paso Stand N'Stuff taco shells
Tabasco sauce to taste
Shredded cheddar
Tomato, diced
Lettuce, shredded

Cook taco meat as indicated on taco mix instructions. Place shells in the oven as indicated on package. Add 1/8 pound of taco meat to each taco, with a light sprinkling of cheese, then add liberal amounts of diced tomatoes and lettuce. Add Tabasco sauce to taste.

Per 2 tacos: 360 calories, 18 g fat, 28 g protein, 23 carbs
