Low-Calorie Recipes: Pesto Chicken

This is a handy recipe for any leftover baked chicken you might have.

Pesto Chicken

1 chicken breast, cooked
1 to 2 T. prepared pesto
¼ cup shredded mozzarella

Take a baked chicken breast and smother with the pesto. Top with mozzarella and place in a conventional oven or toaster oven at 350 degrees until the cheese has melted and the chicken is warm.

Per serving (1 chicken breast = 4 oz.): 325 calories, 16 g fat, 35 g protein, 7 carbs
