Lobster Salad and Borsetti Soup

Lobster Salad
  • Make a bed of fresh arugula leaves
  • Top w/ tomato slices, avocado slices, some chopped celery, blanched asparagus, and wedges of hard-boiled egg
  • Dress with a little lemon juice, salt, and pepper
  • Serve with choice of 1000 dressing or honey mustard
Borsetti Soup  
Borsetti pasta (sometimes called Beggar's Purses) is ususally stuffed with a blend of cheeses.
You can find the pasta in the dairy isle (it is fresh and cooks in 4 minutes)
  • Start with some good chicken stock
  • Add a dry package of Egg Drop Soup Mix (just dry- do not follow directions or add egg)
  • Add a pinch of salt and white pepper
  • Add chopped scallions (green onions) and fresh chopped chives
  • Bring to a gentle boil
  • Add the pasta
  • Cook for 5 minutes
And you're done!
