After teasing you all on my twitter Sunday with pictures of this amazing casserole I’m so happy to finally share it! I originally found the recipe on McCormicks website and pinned it to make asap – I’m a total sucker for anything broccoli. I’ll have a bowl steamed with some nutritional yeast, garlic salt and mayo almost daily.
The full recipe can be found online here but here are the substitutions I made:
Use 1 Tablespoon butter to sautee the onion in (not 2)
Use 1 Tablespoon butter in the bread crumb topping (not 2)
Almond milk versus regular milk
Steamed my frozen broccoli and cauliflower in the microwave for 5-6 minutes before baking (and it still came out a little crunchy)
With my modifications the entire casserole came out to 1200 calories! Pending the serving size (I usually eat double the veggies others do) it could comfortably feed 6 as a side, equaling to 200 calories per serving. It was delicious and has just the right amount of cheese flavor to it.
I made my super low-calorie crustless Quiche Cupcakes to go with it and am happily eating leftovers for lunch this week!
We were able to leave the windows open most of the day Sunday and Monday since the highs stayed around 80 (so cool for us!) Salem is loving having the windows open again. As an indoor cat I always feel bad for him during the Summer months when he can’t smell the fresh air or feel the breeze on his little kitty face,
