I just returned from pedicures and pizza with my friend Jen, but unfortunately my memory card was left in my computer and not in my camera. Whoops!
So rather than share my delicious pizza with you, I’ll share lunch!
My morning oats held me over extremely well, so I wasn’t starving when my lunch hour arrived four hours later. I kept it light with a open faced tomato, baby mozzarella balls and avocado sandwich thin. With a sprinkle of salt and pepper on top. The creaminess of the avocado and mozzarella, the juiciness of the tomato, and the crunchiness from the toasted sandwich thin made this an excellent combination!
Not only did this make a fantastic light lunch, but it would also make a great snack! A very healthy snack for sure.
And it didn’t take more than five minutes to assemble. Score!
About an hour after I got back to work I snacked on vanilla Chobani with loads of blackberries. Somehow a photo escaped me though!
