Lemon Recipes, When Life Hands You Lemons

I was out for a run around my neighborhood and was literally handed some lemons.

This is the weather I have been enjoying. 
It's 78-80F and sunny, with a light breeze.   Just enough so the palm trees blow.  Not to rub it in or anything.

I spotted a huge plastic crate filled with about 300 lemons.  We're talking a lot of lemons. 

There was a sign that said: "Free!  Locally Grown Lemons! Take Some"
So I grabbed a few.  

They are such big lemons and smell so deliciously fragrant.  I love how 3 of them were still attached to the tree branch.  They really do grow on trees.
Now that I have lemons and I can make
1.  "Spicy Doritos" Cheezy Dip
2.  Raw Vegan Kale Chips

3.  Sweet & Sour Honey Lemon Tofu

4. See Dessert Below for #4.  Yum.

  It was fun to hear if you're a fan of raisins or dried fruit , and what you like to make with raisins. 
Dessert: Raw Vegan Cheesecake
With all those lemons, I am just being begged to make some Cheezecake.  It's a super simple recipe.  Just make sure to blend, blend, blend if you make this.  And in 15 minutes, tops, you can dig in!
Raw Vegan Cheesecake  

1. Are you celebrating MLK Day?  Are you off work or school?
I am celebrating it, but I'm still working.  But that's fine.  Gotta do what you gotta do.

2. Do you like lemons?
Interesting of the houses we lived in in San Diego was a 1927 Spanish Mission Revivial house.  It was rehabbed and really just a great little house.   There were drawbacks to it, like no A/C and I was pregnant with Skylar in that house and spent most of my pregnancy begging God for mercy and for cool days because I had horrible morning sickness.

And the plumbing in that house was awful.  I'll spare you the details but we had a plumber on speed dial.

But that house had a gigantic lemon tree outside.  Think Rockefeller Center Christmas Tree size tree.  A huge tree!  

That lemon tree had at least 200 lemons on it at any time.  Far more than I could ever use.  Our backyard always smelled wonderful.  And I made lots of lemonade that year.

3. What's your fave way to use lemons?  Or any citrus fruit?
I'd have to say the Cheesecake is pretty darn good.

And I make a salad dressing with Orange Juice that's really easy called Orange Spice Vinaigrette

4. Has Life Handed you any Lemons lately?  Either literally or figuratively?
I think we all have things that come up that aren't exactly ideal from our car needing a repair to an argument with a friend, but keeping a good attitude about the lemon-ey situation and trying to stay positive is all we can do, right? 

Think of all the great things we do have and that are going wonderfully, and not focusing on the sub-par details is what I try to do. 

Or make cheezecake.
