Lemon Glazed Blackberry Scones

I know that I’m a crazy person for baking during this heat wave. I just couldn’t convince myself to wait to make something sweet until it gets cooler outside. Just crank up the AC and all is fine. You won’t want to miss out on these delicious (and surprisingly healthy) scones.

Blackberry Scones

  • 1 1/2 cups all purpose flour + extra for berries
  • 1/2 cup whole wheat flour
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1/3 cup sugar
  • 1/4 cup butter, chilled
  • 3/4 cup plain greek yogurt (I only had about 1/2 cup of yogurt so I added 1/4 cup of milk)
  • 1 egg
  • 1 cup fresh blackberries (cut in half if they’re large)

Preheat oven to 400F.  In a large bowl, sift together flour, baking powder, salt and sugar; mix thoroughly. Cut in butter using 2 forks (or a pastry blender if you have on). The butter pieces should be small crumbles.  In another bowl, mix yogurt and egg together, and then add to the flour mixture. Mix just to incorporate, it will be lumpy and dry.  Roll blackberries in flour to coat and fold the blackberries into batter. Drop large palm sized rounds onto a parchment lined cookie sheet.  Bake for 15 minutes.

Lemon Glaze

  • zest of 1/2 lemon
  • juice of 1/2 lemon
  • about 1 cup of powdered sugar

Combine all ingredients and drizzle over cooled scones.

I left my glaze watery because I was afraid it would mask the lemon flavor. The scones themselves aren’t very sweet but I absolutely love the lemony sweetness on top. These scones are perfection when served with a fresh Virginia nectarine. I actually considered calling this post “Going to Find Me a Husband Scones” because they are that good. I’ve determined that I will know I’ve met my husband when he tolerates waking up at the crack of dawn on a weekend to go berry shopping for these scones and a nice cup of English tea.
