3/4 Cup Coconut Flour1/4 Cup Almond Flour1/2 Cup Softened Coconut Oil1/2 Coconom Turmeric and Tamarind Coconut Sugar2tsp Vanilla EssenceRind of One Unwaxed Lemon
Soften coconut oil in the microwave for 15 seconds then add to a bowl with sugar and vanilla, give a little stir then add flours.
Add lemon rind, using your hands combine the mixture into a large ball. Take small amounts of the mix and roll into balls with your hands.
Place onto a parchment lined baking tray or grease the tray with coconut oil like I did, I ran out of parchment!
Bake in the oven on a medium heat for 7-0 minutes.
Cool and enjoy!
Hmmmmm, these are so good and healthy to boot! The turmeric and tamarind coconut sugar gives these cookies a yummy caramel taste without being too sweet and paired with the lemon is a great combo. These will be being made a lot more in my kitchen thats for sure.
