LEFTOVERS

Leftovers have an exalted place in the hearts and stomachs of those who truly love good food. Many Mediterranean dishes taste even better the next day and true peasant cooks (the only kind of real cooks) often prepare meals the night before to allow them to “settle.”

Just thinking about leftover Manicotti, Pasta al Forno or Lamb Stew is enough to make one a little crazy!

In a practical sense, leftovers play an important role in our program. Plan to cook MUCH more than just one day’s meal. This gives you leftovers for lunch to take to work or for your child’s school lunches. While most kids will be suffering through processed garbage, you child will be enjoying his lunch to the envy of his classmates.

 (Ray’s entrepreneurial side sometimes took over and he would sell half of his Mother’s homemade MeatballSandwichto a classmate who gladly threw away his boiled chicken chunks)

 Leftovers make great snacks if you’re on the road and provide next day dinners for a busy family. Plan ahead, cook ahead and you’ll always have delicious and healthy food at the ready.
