Since today is a lazy day, I thought it would be appropriate to share my lazy dinner here on the blog. Sometimes it's nice to not have to follow a recipe or really think about what to put in a meal. I try to only resort to frozen pizza occasionally, so this is our "always have the ingredients on hand" meal.
Couscous: cooks for 5 minutes according to package
1 can of chickpeas: rinsed and drained, tossed with vegetables in olive oil and seasoning
Mixture of leftover veggies (mushrooms, brussels sprouts, zucchini, squash, broccoli, peppers, onion, etc.): toss in olive oil, salt and pepper, spread out on a pan and roast at 400F for 30-40 minutes
Optional - Sweet potato: stab all over, wrap in a damp paper towel, microwave for 6 minutes and finish off in the oven for about 15 minutes
