Late Late!

Hi everyone! I am actually busy at work today so my posting is a bit delayed! I am going to post about Monday and Tuesday which included some delicious dinners....and desserts! Let's get started!

Monday


Since I ate chips and bread the entire weekend, I really did not want oatmeal for breakfast. I made eggs in the microwave instead! I also had some yucky office coffee because I was extremely tired and there was no Tazo Awake tea left!

I had a Z-Bar before lunch since the eggs did not fill me up for very long.

Lunch was anything BUT turkey. I resorted to a good old peanut butter and jelly sandwich.

I had a 2nd Z-Bar during the afternoon as well because one of those packages from yesterday arrived with a bunch of bars in there. Could not resist :)

I skipped the gym Monday because the boy was still over. He was not supposed to have work till late Monday night. We decided to go to Whole Foods!

I made a salad with:
  • Baked Tofu
  • Chickpeas
  • Black Beans
  • Sesame Broccoli
  • Grilled Mushrooms
  • Roasted Brussels Sprouts
  • Carrots
  • Seaweed Salad

I also stole some of the boy's pizza of course. Things never change.

We bought single serving beers that they sell right before the cash registers but the cashier told us we were not allowed to drink them in the store. Why sell them at checkout then? We would have drank them anyway but we did not have a bottle opener! We drank them at home instead with some ice cream. Not sure what happened to that picture!

Tuesday

I brought some apple cinnamon oatmeal that I received from Hallie along with plain oatmeal, a banana, and Artisana Raw Sunflower butter.

Yummy! I used to be obsessed with apple cinnamon oats as a kid so this bowl was extra delicious!

Monday night I received my Nature's Pride bread from Foodbuzz to try! I decided to make a sandwich for lunch with it.

I pulled out the whole wheat and put the 12 Grain in the freezer. Pretty nice nutritional stats and ingredients!

I topped it with Barney Butter and Crofter's Superfruit spread.

With some Pretzel Crisps on the side.

I highly enjoyed the bread! I am used to the thin little 45 calorie slices of bread so the huge thick slices were extra delicious. I would definitely buy this bread in the future.

Later in the afternoon, I received a package. I won another giveaway from Emily at My Chubby Confessions. More Zevia!!!

Now I have a nice little stash to keep in my desk at work. I am most excited about the cute shirt!

I snacked on a Z-Bar and Root Beer Zevia later in the afternoon. Yes, I get to read People magazine for work purposes.

I skipped the gym again yesterday. I really tried to wake up in the morning to work out because I knew I could not go after work. I kept passing back out every time I hit snooze-fail. The boy was still here after work since they switched his shift again so we ended up cooking instead. I will definitely get back there today since it's been a week.

We made a similar dinner to last week's Mexican meal!

This time we spiralized some zucchini to mix in the crumbles!

It makes chopping them into small pieces much easier!

We mixed everything together with some Miguel's Chipotle salsa. That stuff is spicy!

We also made corn.

Brown rice.

And ate blue tortilla chips on the side!

I made a salad with mushrooms, peppers, mozzarella cheese, and cucumbers.

I topped everything else over the salad! Heaven!

I drank a beer or two of course :)


I could not finish that huge salad. My eyes are always bigger than my stomach. Lots of leftovers again!!!

We chilled and watched TV for the rest of the night. Of course we ate ice cream too.

I had a mix of both. The cookie dough is so good!

I added some Whole Foods brand whipped cream on top.

I was proud of myself because the boy kept saying he wanted a 2nd bowl but I resisted. That never happens with ice cream. I was completely stuffed from the Mexican salad, beers, and first bowl of ice cream! I haven't had a binge since my food journal post so I guess getting my feelings out there and journaling is working!

That's all for Monday and Tuesday! Today after work the boy is meeting me for dinner one more time before he goes to work at midnight! They must have pushed his shift back 3 times this week! I just did a half hour on the elliptical at lunch because chances are I won't want to go after dinner. Hopefully I do some sort of workout DVD too since I've been slacking a bit!

Daisy says, "Have a nice day!"

Okay...really weird. Just as I typed that about Daisy, my dad sent me an e-mail. It said:

Daisy says, "Sqeak, sqeak". Translation: Hi Melissa

Haha love it! She is at work with my dad right now! I wish I could bring her here!!
