Last Pre-Half Marathon Run and Blueberries ‘n Cream Oats

Happy Friday! I hope it is sunny where you are because it is finally sunny here in Chicago! I am so excited that the weather forecast for Sunday has changed from a 60% chance of rain to this!


My race starts at 7:30 am and will take me about two hours to complete. It would be awesome to run in a tank top, shorts and sunglasses, however, I am happy with any running outfit that doesn’t include a rain jacket!

This morning I whipped up a very successful new oatmeal dish I’ve dubbed ‘Blueberries ‘n Cream Oats’. If you love cake batter and Kath’s DoughBoy smoothies then you will love this recipe.

I started by simmering 1/2 cup oats in 1 cup almond milk


while defrosting 1 cup of frozen blueberries.


After simmering the oats for 5 minutes, I blended them with 1/4 cup ricotta cheese, a drizzle of maple syrup, and 2 drops of vanilla extract.


Last, I combined the two layers into one bowl of fruity deliciousness!


Blueberries ‘n Cream Oats is quick and easy to prepare and satisfying in a healthy, stick to your ribs kind of way.

While digesting my wonderful breakfast I did some much needed updating to my BlogRoll . Despite my best efforts, I am positive that I have forgotten to add a few of my favorite blogs. After my blog work I set out for an easy three mile run along the lake path while my boys walked along the water’s edge.


I was so happy to discover that the tightness in my right Achilles vanished just as mysteriously as it began. Overall I felt good and made a concerted effort to maintain an easy pace so that my legs will be fresh for the race on Sunday.

The path was quiet and relatively empty which reminded me that I haven’t run with anybody except Mosely in a very long time. path2

Despite the fact that I always train alone, I almost always end up running or biking alongside other participants when I race. During the bike leg of the 2009 Chicago Triathlon I was really glad to be chatting with another triathlete because it distracted me from my fear of crashing! I wonder if I’ll happen upon a running buddy on Sunday…
