Last Night’s Eats: Honey Ginger Salmon with Broiled Beans & Broccoli

Can I just tell you how impressed I was with myself last night? After almost another week of not cooking I whipped this up for dinner yesterday.
All this courtesy of some frozen salmon fillets which I defrosted while chatting with the boyfriend and prepping some broccoli and green beans for roasting. I gave them a little kick with some red pepper flakes.
My phone date ended and the veggies were ready to go into the oven but the salmon still needed more time to defrost so I went for a 1 hour power walk! It was too hot to run so I grabbed my iPhone to chat up my mom and catch up on some of my favorite podcasts while working up a sweat.
When I came home, I preheated the oven to 400F and popped the veggies in to give them a head start, since salmon takes all of 8 minutes to broil. Meanwhile, I mixed up this glaze for the salmon: 1 tablespoon + 1 teaspoon honey, 2 teaspoons soy sauce and 1/2 teaspoon fresh grated ginger.
After 8 minutes or so, I cranked the oven to broil and put salmon went in – rubbed down with a little salt & pepper.
While the oven door was open, I shook up the veggies to keep them from burning and moved them to the shelf below the salmon. After 4 minutes, I spooned the honey/soy/ginger goodness onto the fillets.
Another 4 minutes under the broiler and bam, dinner was done.
I even have leftovers for tonight too which will come in handy after power yoga with Anne – it’s our last Wednesday night class before we leave for our 3 1/2 week summer vacation. Gotta run!
