Okay so I might have a kale problem. There are worse problems to have.
In New York I became shamefully addicted to a kale salad from Juice Generation . The ingredients were simple enough, and as a coworker pointed out to me more than once, it would be easy and much more cost effective to make this salad on my own. It took me a few months and a lack of Juice Generation in LA to do so, but now that I have successfully recreated it, it will be a staple for me because I just can’t get enough.
Kale Crack Salad – inspired by the Kale Salad at Juice Generation
Serves 1 kale addict
2 cups kale, washed and roughly chopped
1/2 cup Trader Joe’s broccoli slaw
2 tbsp sunflower seeds
2 tbsp raisins or dried cranberries
1/4 lemon, juiced
Add kale to a salad bowl. Scoop out avocado and using your hands, massage into kale leaves until they are fully coated and begin to wilt. This part is equal parts fun and gross. Add broccoli slaw, sunflower seeds, raisins or dried cranberries and lemon juice. Go to town.
*Optional – on days I need a little more protein, I add a 1/2 can of tuna, drained.
