Just Posted 1/27/10 Chocolate Blueberry Smoothie, and Sweet Potato Flax Seed Bars!

I just made this today and let me tell you it was just like a milk shake! Yummmmm :) I actually stumbled upon it since I had not yet made my Lentils Soup (Recipe will follow later this week!) and needed something quick since I had just had a pretty intense 40 minute speed jump rope session! I was craving something creamy and thick and sinfully rich and of course sweet too! Oh this sure hits the spot.
I have seen and read about a lot of smoothies and "green smoothies" but they all look kinda gross (but I bet they taste better than they look) and well don't sound very appetizing. It's always my goal to re-create or create recipes based upon what my taste buds are screaming for! And today it was chocolate and berries. So this is what I came up with. This delicious and of course super nutritious smoothie to hit almost every aspect of health and nutrition you need in your day! That is usually the goal of smoothies right!?
Plus look how much it made too! Very filling and I could not believe the huge burst of energy I had afterwards. I took my dogs out for another exercise session and walked 3 miles! So this smoothie can also give you that mid-day boost you need too! I believe it has a lot to do with the perfect harmony the berries, protein, cocoa, and the sneaky little ingredient (spinach) play in giving your body what it craves. Try it and love it! lol
2 1/2 tbsp Rice Protein (I use Jarrow Formulas Smooth Chocolate Brown Rice) 1/2 cup frozen blueberries 1 cup almond, soy, or rice milk 2 heaping tsp Stevia 2 heaping tsp cocoa powder (I used Hershey Extra Dark) 1/2 tsp vanilla 1 cup spinach 1 tbsp Chia Seeds 1/2 cup crushed ice
First blend the blueberries. Next add in the remaining ingredients except for the ice. Once everything is blended slowly add in your ice. Everything should jive together and create a smooth and creamy sensation rich in cocoa and perfectly sweet! Enjoy!
I have actually had something similar to this most of my life. My Mom used to make these delicious "healthy pancakes" and we would freeze them for breakfast or snacks. This recipe is different but definitely inspired from her version. I have been making these for several months now and have actually mentioned them a few times. I don't know why I had never thought about putting them up. I guess I figured they may be a little strange for some peeps. But I just love them and they make excellent on the go snacks for me. Diesel even enjoys a bite or two!
I also like to add a tsp of raw almond butter and a drizzle of honey on top! They really tide me over and also give a ton of energy. Sweet potato's are so good for you and actually level out your blood sugar. I love them just by themselves too. They are excellent sprinkled with a little sea salt and drizzled with agave nectar.
Sweet Potato Flax Seed Bars 9-12 servings
3 baked sweet potatoes 1/4 cup apple sauce to replace the egg whites or use 2 egg whites 3 tbsp Agave Nectar 2 tsp cinnamon 1 ripe banana 1/4 cup Flax or Chia Seeds 1/2 tsp salt 1/2 cup steel cut oats 1/4 choc chips (optional)
Pre-heat oven to 375 degrees. Blend sweet potatoes first including skin for added fiber and nutrition. Add in the remaining ingredients and blend until it's all meshed together. Pour into individual cup cake or mini banana bread pans. Bake for about 30 to 45 minutes or until a golden brown.
They freeze perfectly for at least a couple of weeks. I actually still have my last batch in there from over a month ago and they are still great! I like to toast them straight out of the freezer for a freshly out of the oven effect.
I had mentioned before that I have been using jump rope as my new form of exercise. I just love it and boy is it one amazing workout. My knees and hips are thanking me for taking a break from the treadmill. Not to say that I don't run anymore, I just run for 20 minutes instead of 45-60. It is so amazing to me how your body can acclimate to something new and challenging so quickly.
And on another note I have been stretching and practicing the dance stretches I used to do in high school. I am almost back to the splits! Yipee! lol I never thought I would be able to attain that again. So that is my goal now to be able to do the splits all three ways! I should be there by the end of spring with the middle splits. Those take awhile to train your body to do. The other two are rather easy for me since I was able to do them before. I will have to take pictures once I am there :) Oh and I did not take any hair extension picture this weekend so I do apologize and will hopefully get some taken by this weekend.
What types of smoothies do you like to make? Do you sneak any green veggies in there? I have tried Bok Choy, but I can taste it and did not care for that flavor very much. And do you feel energized like you have just had a huge cup of coffee?! I also love the fact that smoothies are raw for the most part! I am not sure if I can count the rice powder as raw, not thinking so! Let me know if you have this answer :) Or I'm sure I can google it.
