Friday's rock. The end.
Breakfast Made both the hubs and I breakfast. Egg+2 egg white scramble, sausage patty, strawberries, and slice of Rudi's whole wheat toast with organic PB and jam. Work-Out Since I got to work out with Chris today we decided to head to the pool to get a good swim in. I mentioned earlier that I have been helping Chris swim better. I have to say he is improving! 1500 Meter Swim** 200m warm-up, any stroke (we did free) Drill Set - Repeat 3 times for a total of 900m 2x100m (50m arms only, 50m kick only - do twice) 100m freestyle Speed Set - do twice 50m sprint 50m easy 200m cool-down, any stroke (I alternated 50's of free and breast) **After repeating the drill set 3 times I added in a 200m breaststroke while I waited for Chris to catch up ;) Lunch Freebirds! If you are in Texas you know what Freebirds is. If not, it's a lot like Moe's or Chipotle. I had a chicken burrito with salsa, cheese, beans, tomatoes, and lettuce and Chris and I shared the chips and salsa. YUM. We had to rush to finish our errands in the afternoon. We got our grocery shopping done and a quick trip to Finish Line for Chris to get color-coordinating shoelaces for his new running shoes. I swear he is like a woman sometimes! Dinner We had a BBQ at a friend's house tonight. They grilled chicken, corn, potatoes, and beans. It was delicious but the company was even better :) Dessert Mini-Fruit Tarts ( print recipe ) Ingredients: Pre-Made Pie Crust 1 1/2 cups cold water 6 tbsp fat free sweetened condensed milk fat-free sugar-free vanilla pudding 12oz whipped topping assorted fruit, chopped Preheat the oven to 400°. Invert a 12-cup muffin pan and lightly grease the outside bottoms and sides. Cut pie crust into four 4-inch rounds. Drape the 4-inch rounds over the muffin cups to mold into the cup shape. Do this for a total of 12 shells. Bake for 10-12 minutes or until golden brown. Let cool completely. Whisk the cold water and condensed milk. Add the pudding and whisk for 2 minutes. Let stand for 2 minutes. Fold in the whipped topping. Refrigerate for 30 minutes. Pipe the whipped mixture into the cooled shells. Decorate with your fruit. Serve cold. Enjoy! |
