Last night me and Mark watched Inside Job , the academy award winning documentary about the global financial crisis of 2008. I’m no economy buff, and the stock market sends my head into a bit of a spin, but this movie is definitely a must-see. Well researched, filmed and narrated (helllllo Matt Damon !), it kept me interested and also made me go “WTF, how could this happen?!” The movie explains how the impact of the meltdown was felt on a global level and gives an inside scoop into the dirty world of CEOs at some of the biggest financial companies.
Speaking of an inside job, someone keeps stealing my salad greens.
I found teeth marks on the collards and there’s arugula missing.
I can’t even tell you how long it took me to make these with Rocket in the kitchen.

My fruit roll-ups are suuuuper easy to make and quite delicious. No Red 40 or corn syrup found here. Take a collard, cut the stem out, spread on some peanut butter (or nut butter of choice) and add a fruit. I used 1/2 banana for these. And roll!
