Hey everyone! I’m back home! Well I’ve got some catching up to do on food don’t I? I’ll start off with
Tuesday..
I woke up, took a shower, put my face on, and made a big breakfast. I’m a big advocate of eating at home- and I try to make a big breakfast so I won’t be tempted with any unhealthy airport food! I went with an old favorite- oats! In the mix went:
- 1/2 cup oatbran cooked in 1 1/2 cup water + cinnamon
- 1/2 ripe banana
- 1 tbsp chia seeds (stirred in towards end of cooking)
- 1/4 cup egg whites (tempered in when heat was turned off)
- 1 tsp raw cacoa nibs
- 1 tbsp Naturally More Peanut Butter

That little bowl held me over a good 5 1/2 hours! Arizona is an hour behind New Mexico so I was hungry for lunch at 11:00 AZ time. But even then I wasn’t starving! Before Bryon left I bought him a waffle/sandwich maker from Target. He was so generous and let me use it.. numerous times throughout the trip
The first time I made a peanut butter sandwich using 2 slices Alpine Valley Multigrain bread, 2 tbsp peanut butter, and some thin slices of an apple.

We pretty much were lazy the rest of the afternoon- watching movies and what not. Later on I snacked on a Cranberry Heart Thriv e that I brought from home:

And then for dinner we went to the Pita Jungle! New Mexico doesn’t have any healthy restaurants that I know about so I was in heaven over here! I wanted almost everything of the menu but finally decided on the Spicy Chicken Wrap- but I asked for no rice and a whole wheat pita instead of white:


That baby was HUGE! I ate 1/2 of it.. and it was delicious!
Wednesday
Wednesday morning I woke up before all of the boys and decided to take advantage of their apartment gym. Before I left I ate 1/2 a banana:

And then I did 20 minutes on the elliptical, an 11 minute jog, and a few of the strength training equipment. When I came home I was quite hungry for breakfast and made myself some oatmeal! In the mix went:
- 1/2 cup oats cooked in 1 cup Almond Dream + 1/2 cup water
- 1 packet vanilla Jay Robb Protein Powder
- 1 tbsp crunchy peanut butter
- Sugar-free maple syrup

Maybe I was just hungry but that oatmeal was sooo good!
After breakfast we lounged around and then hit up some stores. We went to the mall and then some discount grocery store that we found- that place was amazing! They had a 16oz container of Oikos for 2 bucks! And Stonyfield yogurts for fifty cents each!
When we got home I made another sandwich with his sandwich press. This time I used 2 slices Alpine Valley Multigrain bread, 2 tbsp crunchy peanut butter, 2 tbsp vanilla Oikos Greek Yogurt, and cinnamon. It was my favorite by far!

And later I had more vanilla Oikos Greek Yogurt with cinnamon:

And 1/2 of an Apple Ginger Honest Foods bar:

Later on in the day we went to the pool and some more stores. Bryon lives with 2 other roomates- both boys that we went to high school with. And all they’ve been eating are egg burritos! Bryon actually asked me if I’d make Veggie Paremsan.. so I did! I used a mixture of nonfat and 4% cottage cheese, added 2 cans of tomato sauce instead of 1, and added lots of cheese to their portion. To my portion I left off the cheese and ate steamed broccoli on the side:

And then we went to Dippin’ Dots! I ordered a small Strawberry Cheesecake Frozen Yogurt:

Yummy! I also made the boys M&M cookies… they were pretty much gone in 5 minutes!


Thursday
Once again I went to the gym while the boys were sleeping and ate 1/2 banana before I left. Over there I did 55 minutes on the elliptical. And I worked up quite the appetite!
I snacked on multiple dehydrated zucchini slices that Bryon made while I cooked breakfast:

By the time I ate breakfast it was already 9:00! I made Bryon and I some Power-Up Your Morning Pancakes.. but I experimented with mine. I didn’t want to use up their eggs so I used 1/4 cup Almond Milk instead and 1/2 cup greek yogurt instead of cottage cheese. The result was not very pancake like.. but still tasted good! I topped mine with 1 tbsp peanut butter and sf maple syrup. Plus another 1/2 cup yogurt on the side:

And then I just hung out around the house with Bryon. We drove to the airport pretty early and walked around there looking at all of the stores in the Phenoix airport. I never got hungry for lunch but I never skip a meal so I ended up getting a large Unsweetened Iced Green Tea from Starbucks (I had a coupon for a free drink!) and I also ate a Peanut Butter and Jelly Larabar:


Not the best example of lunch but I had a stomach ache and didn’t want to push it!
There was tons of traffic coming home! When I finally got home all I wanted was a nice big salad full of greens! So that’s what I made
In the bowl went:
- Organic baby spinach
- ≈5-6 oz cooked chicken breast
- 1 Precious Pepper Jack Cheese Stick
- Fresh green chili
- Homemade guacamole (1/2 avocado mixed with fresh salsa)

Phew that was a long post! I may or may not have dessert tonight.. I haven’t had much of an appetite today unfortunetly. But I do know I am one sleepy girl! It always amazes me how sitting all day can make you so tired! I’m off to go unpack and lounge around for the night.. no 10,000 steps for me today!
