Homemade Walnut Milk

Hi There! Hope you are all enjoying your Sunday night…

How was your weekend? Ours was pretty eventful. We got a little bit of snow, but it didn’t keep us from going out….

Friday night we took Ella to Maggiano’s. She loves going out to eat! Her latest favorite dinner (which we bring out) is beet and bosc pear puree, courtesy of mommy. It’s very messy though. Oops. Good thing I ordered red wine to cover Ella’s tracks.

On Saturday night we went out with three other couples for dinner and drinks; there were a lot of laughs. Sunday, after yoga, we took Ella to the mall where they have this big play area for kids. She’s crawling like a crazy lady and pulling herself up, it’s so cute. I had to hover over her like a body guard, there were some wild kids in there and Ella was the smallest one. She had such a blast, she LOVES other kids. Since we’re fortunate enough to have our family watch her when I am working, she doesn’t have to go to daycare, but at the same time she’s not getting a ton of interaction with other kids. I’ve been trying to find some play groups, but they all seem to be at times I am working. At the very least I may just start bringing her to the gym with me more where they have  child care. There are usually a good amount of kids in there. I of course just worry about her getting trampled on or freaking out when I leave her with a stranger, but I guess we will have to figure it out.

So….I’ve been wanting to share with you my latest DIY nut milk and the method I’ve been using.

I started making almond milk since I got a Vitamix about two years ago. In fact, making my own nut milk and nut butter was probably one of the main reasons I wanted one!

I had a ton of walnuts left from over the holidays so I decided I would try to make some walnut milk to see if I’d like it.

Walnuts, known as a “brain food” are one of the healthiest nuts you can eat! They are a good source of Omega-3 fatty acids, ALA (alpha-linolenic acid), and melatonin (<—a natural sleep aid). Eating a serving of walnuts a day lowers your risk of weight gain, when combined with a healthy diet and exercise regimen!

Many sources say to soak your walnuts to make them more digestible. In this recipe, or any nut milk recipe you will need to soak the nuts to soften them. However, if you are just snacking on them, and find your tummy doesn’t always agree, try soaking them and laying them out in your dehydrator or a sunny window (or your oven at a very low heat setting for a few minutes). If you find walnuts to be bitter tasting, soaking will take care of this for the bitterness comes from their skin. Some sources say to not soak walnuts because the skins have some health benefits…but I think you could just go with personal preference.

Homemade Walnut Milk

ingredients:

* 1 cup walnuts, soaked for at least 4 hours (the longer the better)

* 4 1/2 cups filtered water (see note)

* 4-6 pitted Medjool dates

* 1 1/2 teaspoons vanilla extract

* a pinch of sea salt

method:

soak your walnuts for 6 hours minimum, or overnight. I usually start soaking mine sometime before bed then make my “milk” sometime the following afternoon.

Drain your walnuts and pour them into a high speed blender. I use a Vitamix. Pour about 4 1/2 cups of filtered water (note: this makes it the consistency of 2% milk. If you like it thinner add more water, thicker add less), then start blending on the lowest setting and gradually bring it up to the highest.

*If you are using a Vitamix, you should use this method to blend all the time! Think of it as the Lamborghini of blenders! You should never just go into a high gear, it will ruin your engine.

I highly recommend using a nut milk bag. I used to use a cheese cloth, and that works just fine, but a nut milk bag is just a thousand times better (and they are cheap). You get much, much more “milk” from your batch, and I think it thins it out better!

Once you’ve “milked” the nut bag or ran it through a cheese cloth pour it back into your blender and add the remaining ingredients. I like to do this because it gives it a better consistency (in my opinion) and I like to add the flavors after I squeeze all the milk out and separate the pulp. Again, start your blender on low and gradually bring it up to high, blend until you think the dates are pulverized and then bring the blender down, pour your milk into a glass jar and store in the fridge for up to 4 days.

So easy. So delicious.
