Add the espresso and almond milk to the crockpot.
Whisk in the canned pumpkin, pumpkin spice, cinnamon, Truvia, and syrup.
Cover and cook on high for 2 hours.
Pour into your favorite mug and add a dollop of Cool Whip and a pinch of cinnamon.
Serving size: 2
You can use any flavor of sugar free syrup; it doesn’t really matter, it just adds sweetness and flavor. Add extra pumpkin spice and cinnamon if you would like to intensify the flavor (I did).
If you don’t do almond milk, you can easily substitute nonfat milk or your preferable option. You could also substitute maple syrup for the Torani syrup + brown sugar.
Please, please, please let me know what you think!
And I prepped some Overnight Pumpkin Pie Oats in the crockpot for breakfast. Given this batch is as delicious as I anticipate, keep your eyes peeled for THAT recipe! I’m pretty excited to try! Dessert for breakfast anyone?!
