Homemade Dairy-Free Chocolate Ice Cream

It has been HOT HOT HOT in MN. I have been drinking insane amounts of water:

And eating tons of fruit, mostly strawberries:

But what I really wanted was some ice cream – I take that back, some soft serve from DQ. However, I know that eating those foods makes my stomach feel awful for days so I thought I’d make something at home. I have not had good luck making Banana Soft Serve and Protein Ice Cream – only because my Magic Bullet is not great at processing those ingredients. I want to get a food processor, but I don’t *need* one.

I did remember seeing a video on Foods of April a few weeks ago which showed you how to make Homemade Ice Cream (or any milk) using milk, ice and ziploc bags.

I used plain almond milk, 1 TBSP of cocoa powder  and a packet of NuStevia :

I try to never exaggerate with how good foods taste – but this seriously tasted like regular chocolate ice cream. The texture was a little different since it was a bit crumbly, but don’t let that turn you off.  It takes a bit of work (once you watch the video you’ll know why) but it was so worth it.

I will definitely make this again!

I did some cross training last night:

I also spent 30 minutes stretching and foam-rolling. This is something I am planning on doing more and more now that I am in taper mode for the marathon. Only 11 more days until the race!
