Howdy ya’ll! I’ve got an amazing recipe coming your way! This weekend, Vince and I went to a joint birthday party for two of our close friends. It was a relaxed get together at one of their houses and we really wanted to bring something special for the birthday girl and boy!
After browsing the internet for ideas, we decided on a modifed version of Coconut Cupcakes. Oh boy was this a good choice! The recipe was really simple and we actually had all the ingredients in our apartment anyways. Love when that happens.
The recipe called for:
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup packed sweetened shredded coconut
6 ounces (1 1/2 sticks) unsalted butter, softened
1 1/3 cups sugar
2 large eggs, plus 2 large egg whites
3/4 cup unsweetened coconut milk
1 1/2 teaspoons pure vanilla extract
Buttercream frosting
1 1/3 cups large-flake unsweetened coconut

This made 21 cupcakes so we doubled the recipe to ensure that we’d have enough for everyone.
Directions
Preheat oven to 350 degrees. Line standard muffin tins with paper liners. Whisk flour, salt, baking powder, and sweetened coconut in a large bowl. Cream butter and sugar with a mixer until light and fluffy. Add eggs, 1 at a time, beating after each addition.
Reduce speed to low. Mix any coconut milk and vanilla in a bowl. Add dry ingredients to butter mixture in 3 additions, alternating with wet ingredients and ending with dry. Scrape sides of bowl. Divide batter among muffin cups, filling each 2/3 full.
Bake cupcakes until testers inserted into centers come out clean, about 20 minutes. Let cool in tins on wire racks. Frost with buttercream frosting and top with shredded unsweetened coconut.
We had 4 huge tupperwares of these babies when we finished!
Vince and I finished frosting the cupcakes in the nick of time and quickly headed out to the par-tay with Sandy. Whenever my friends get together, it’s not just a people party, it’s a dog party too. We’re crazy dog-lovers!
Apparently we weren’t the only people hoping to satisfy a sweet tooth. The house was filled with pastries, ice cream, and other delicious baked goods! Vince and I chuckled to each other as we put the cupcakes down. Before baking them we were convinced that one batch wouldn’t be enough to feed everyone…boy were we wrong!
We spent the night having a great time laughing and playing ridiculous games like Mafia. I am the worst at that game. Can’t tell a lie for the life of me. It was a super-fun night and we ended up getting home around 2:00am just as it started to pour! I’m pretty sure I fell asleep the minute my head hit the pillow!
