Home-made Baileys Irish Cream & a Non-dairy Version

Home-made Baileys has been a Christmas tradition in my family. I enjoy this over ice or in coffee; it’s delicious and so much better than the store-bought stuff. What I don’t love is how dairy makes me feel. I broke up with dairy after Christmas 2011 when it was pretty evident that between the Baileys, coffee pudding (wait for that recipe), and cannoli’s from Mike’s in Boston, that dairy made me sick. Last year I only made Baileys to give away as gifts. This year I decided to try my hand at tweaking my mom’s recipe to make it non-dairy. I figured if it was terrible I could throw it in my ice cream machine
As I said, this makes a great gift. Pour it in a Ball jar with some ribbon tied to it, and you have an inexpensive home-made gift. You look amazing while you laugh at how stupid easy the recipe is.
The non-dairy version subs coconut cream for the sweetened condensed milk. And considering coconut is such a health food, this is healthy right?! Well maybe not with all that whiskey but hey, it’s Christmas. We all have to live a little. And to quote Michael Pollan’s food rule “Eat all the junk food you want as long as you make it yourself.” As least you’re making this yourself.
Mom’s Recipe: Baileys Irish Cream
1 1/4 cup whisky
Non-dairy Irish Cream over ice with nutmeg garnish. Delicious!
1 can sweetened condensed milk
1 tbsp. vanilla extract
1 tbsp chocolate syrup
1/4 tsp coconut extract
4 organic eggs
nutmeg as a garnish (optional)
Place all ingredients into a blender and mix well.
Transfer to an air-tight container (I use canning jars)
